Bekkō candyA hard candy (American English), or boiled sweet (British English), is a sugar candy prepared from one or more sugar-based syrups that is heated to a temperature of 160 °C (320 °F) to make candy. Among the many hard candy varieties are stick candy such as the candy cane, lollipops, rock, aniseed twists, and bêtises de Cambrai. Most hard candy is nearly 100% sugar by weight, with a tiny amount of other ingredients for color or flavor, and negligible water content in the final product. Recipes for hard candy may use syrups of sucrose, glucose, fructose or other sugars. Sugar-free versions have also been created.

Ume suishōUme suishō is a Japanese delicacy commonly served as a sakana (drinking snack). It is prepared by finely chopping shark cartilage and dressing it with pickled plum paste, resulting in a distinctive crunchy texture and sour flavor. The dish is popular as an accompaniment to sake and shōchū, and is frequently served in small portions at izakaya (Japanese-style pubs). It is often garnished with ingredients such as shiso leaves or cucumber, and is sometimes used as a filling for hosomaki or other forms of sushi.
Usukawa ManjuManjū is a traditional Japanese confection, usually a small, dense bun with a sweet filling. They come in many shapes and varieties. The standard manjū has a skin made of flour, and is filled with anko (sweet azuki bean paste). Some varieties use kudzu starch or buckwheat flour for the skin. Other types of filling include sweet potato, chestnut jam, or custard. Manjū is usually steamed or baked, though fried manjū can be found in some modern restaurants. Traditional manjū are usually round, but many different shapes exist today, and some are proprietary to specific bakeries.

Fish-shaped pastryTaiyaki (鯛焼き, lit. 'baked sea bream') is a Japanese fish-shaped cake, commonly sold as street food. It imitates the shape of tai (鯛, red sea bream), which it is named after. The most common filling is anko. Some shops even sell taiyaki with okonomiyaki, gyoza filling, or a sausage inside. Smaller, differently shaped versions called kingyoyaki (金魚焼き, lit. 'baked goldfish') are also available and often sold in bags of five, ten, or more. Taiyaki is similar to imagawayaki, which is a thick round cake, also filled with sweet adzuki bean paste or custard.

ShoyumameShoyumame (しょうゆ豆) is a regional cuisine of the Kagawa prefecture of Japan. Shoyumame consists of parched broad beans left overnight in a marinade consisting primarily of soy sauce and sugar, with mirin and sake usually included in the marinade. It is commonly served alongside lunch or dinner, or as an accompaniment to alcohol. Although similar in appearance, shoyumame should not be confused with shoyunomi—a regional dish of Nagano, Niigata, Yamagata and Kagoshima prefectures, which consists of steamed black beans that have been fermented in soy sauce with rice malt.
