↔ No white kimchi (baek kimchi)? Store-bought kimchi works well. For cooking, older and more sour kimchi tastes better. Sauerkraut with a little gochugaru is a last resort.

Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Finely chop the green chili pepper.
  2. Cut the white kimchi into bite-size pieces.
  3. Stir-fry the white kimchi in a pot, and when the kimchi is cooked, add the sesame oil, ground black pepper and minced garlic and stir-fry.
  4. Add water (200g) and boil.
  5. When the water boils, add the soybean pulp, soy sauce and green chili pepper and boil over low heat for about 15 minutes to finish.
💡 TipWhite kimchi is used instead of the aged kimchi usually put in soybean pulp stew, reducing salt and giving a clean taste.
