Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Grate the pear into the dongchimi, season with sugar and vinegar, and keep it in the refrigerator.
  2. Cut the onion into thin strips and slice the cucumber and carrot, then lightly brine them in salted water.
  3. Season the ground beef with the minced green onion, minced garlic, plum syrup, sesame oil, toasted sesame seeds, pepper, sake, sugar, and soy sauce.
  4. Knead the seasoned beef well and shape it into round tteokgalbi patties, then let them rest in the refrigerator.
  5. Gently cook the rested tteokgalbi in a lightly oiled pan and put them on a napkin to drain the oil.
  6. Boil the noodles in boiling water, rinse several times in cold water, drain, and put in a bowl. Top with the tteokgalbi, pour in the chilled dongchimi broth, and top with cucumber, carrot, and onion as side vegetables to finish.
💡 TipThe pear and the dongchimi broth go together to lower the sodium.
