Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Cut the king oyster, oyster, and shiitake mushrooms into bite-sized shapes.
  2. Lightly sprinkle the cut mushrooms with salt.
  3. Mix the starch and beaten egg evenly into the salted mushrooms.
  4. Cut the cucumber, carrot, onion, and kiwi into small cubes.
  5. Mix the sugar into the low-sodium soy sauce in a pot and boil, stir in the starch slurry to adjust the thickness, and add the cut cucumber, carrot, and onion to make the sauce.
  6. When the frying oil reaches about 170-180 C, quickly deep-fry the starch-coated mushrooms (3), drain the oil, put them on a plate, top with the sauce (5), and add the kiwi to finish.
💡 TipThe aromas of the various mushrooms and the sweet-and-sour kiwi come together to lower the sodium in the sauce.
