Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Finely mince the onion and jalapeno, blanch the tomato in boiling water, remove the skin and seeds, chop finely, and stir-fry, then add the ground beef and season with salt and pepper.
  2. Finely chop the bacon, garlic, and onion, and drain the kidney beans in a sieve.
  3. Stir-fry the bacon in a pan and remove the fat, stir-fry the garlic and onion from step 2, then add the kidney beans and season with a little dried basil, salt, and pepper, and blend in a blender into a puree.
  4. Cut the pear and orange into 1cm dice and mix with the lemon juice and paprika powder to make the salsa.
  5. Lightly toast the tortilla in a dry pan, spread thinly with the kidney bean puree, add the stir-fried beef, shredded lettuce, avocado, bacon, tomato, and sour cream, and roll up.
  6. Serve step 5 with the pear and orange salsa.
💡 TipBuy jarred jalapenos or substitute Cheongyang chili peppers (Korean hot green chilies).
