Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Make the lemon sauce and reduce it over low heat.
  2. Cut the water dropwort into 4cm pieces and toss the leaf portions with the lemon sauce.
  3. Thinly slice the lemon left after squeezing out the juice.
  4. Clean the pollack and season it with ground black pepper.
  5. Line a steamer with rising steam with a cotton cloth, place the pollack on it, top with the water dropwort stems and thinly sliced lemon, and steam over medium heat for 10 minutes and low heat for 10 minutes.
  6. When the pollack is cooked, finish by pouring the water dropwort leaves tossed in lemon sauce and the remaining lemon sauce over it.
💡 TipThe fish is not cooked in seasoning; it is steamed first and then served with a sauce, so the seasoning does not soak into the flesh. This keeps sodium low and lets you taste the natural flavor of the ingredients.
