Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Soak the spare ribs in cold water to remove the blood.
  2. Remove the ribs from the water, put them in a pot, and boil to make a broth.
  3. Blanch the mugwort, cut the carrot and potato into bite-size pieces, and slice the red chili pepper and Cheongyang chili pepper on the diagonal.
  4. Finely mince the blanched mugwort.
  5. Knead the glutinous rice flour with the minced mugwort and hot water (ikban), put it in a plastic bag, and let it rest.
  6. Cut the rested glutinous rice dough into small pieces and roll the middle to make jorangi mugwort rice cakes (tteok), then boil briefly in the broth with the prepared vegetables.
💡 TipMaking the broth with bones adds calcium and also gives a nutty flavor even with little salt.
