Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Put the broth ingredients in a pot and boil. When the water boils, remove the dried kelp and boil a little longer to extract the broth.
- Remove the innards, mouth and eyes of the webfoot octopus and cut into 4cm pieces.
- Squeeze the liquid out of the kimchi and cut into bite-size pieces, slice the radish, mince the garlic, slice the green onion on the diagonal, coarsely julienne the onion, and cut the tofu flat.
- Heat sesame oil in a pot, stir-fry the kimchi, radish and onion until the onion is translucent, then pour in the broth, and when it boils, add the webfoot octopus and minced garlic and boil more.
- Mix the kimchi brine and Asian pear juice at 2:1 and add to the stew to adjust the seasoning.
- Add the tofu and enoki mushrooms and bring to a quick boil to finish.
💡 Tip•The kimchi is squeezed of its liquid to reduce salt, and seafood is added to season the stew. •Pear juice neutralizes the saltiness, reducing sodium.
