Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Boil the kelp and radish in a pot, add the bonito flakes, and turn off the heat to make a rich broth.
- Add vinegar, sugar, and salt to the broth to make sushi vinegar.
- Sear the tuna over a flame (tataki) and cut thick.
- Char only the outside of the bell pepper over an open flame and cut to the size of the tuna.
- Blanch the asparagus and shiitake mushrooms briefly and slice.
- Beat the eggs with the broth, fry a thick egg sheet, and cut; mix the sushi vinegar evenly into the rice to make sushi rice, then top in order with wasabi, tuna, egg, shiitake mushroom, and bell pepper, and wrap with a strip of laver.
💡 TipMaking the sushi vinegar with a kelp and bonito flake broth lets you use less salt.
