Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Add the starch, oil, salt, egg, and water to the flour and knead into a dough.
  2. Put the kneaded dough in a plastic bag and let it rest.
  3. Boil the dried shrimp, anchovies with heads and innards removed, onion, kelp, radish, and whole garlic in a pot, and strain the broth through cheesecloth.
  4. Cut the zucchini into half-moons and slice the red chili pepper on the diagonal.
  5. Add the perilla seed powder to the prepared broth and boil.
  6. Roll the rested dough (2) thin to make kalguksu noodles, bring the prepared broth (5) to a boil, add the noodles and zucchini and boil, then add the red chili pepper and boil once more to finish.
💡 TipThe combination of a cool seafood broth and nutty perilla seeds means no separate salt is needed.
