Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Soak the L.A.-style short ribs in water to remove the blood and bone dust.
- Finely grate the pear and onion on a grater.
- Add the pear juice and onion juice to the bloodless ribs and let them rest.
- Put the low-sodium soy sauce, bay leaves, whole peppercorns, oligosaccharide syrup, sake, sugar, water, and plum syrup in a pot, gently boil for about 30 minutes, and cool.
- Add the green onion, garlic, sesame oil, and toasted sesame seeds to the cooled soy sauce.
- Add the seasoning to the rested L.A.-style ribs, let them rest for another day, and grill in a pan to finish.
💡 TipBay leaves and whole peppercorns give depth of flavor, making ribs with a deep taste even without salt.
