Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Cut the eggplant, zucchini, and tomatoes into 0.3 mm-thick slices.
- Microwave the squash for 5 minutes; when cooked, cut off a bit of the top and remove the seeds.
- Stir-fry the smoked duck and garlic evenly in a pan over medium heat, then stuff them into the squash.
- Add olive oil to a pan over low heat, add the ratatouille sauce ingredients, salt, and ground black pepper and stir-fry for 10 minutes to make the ratatouille sauce.
- Spread the ratatouille sauce wide in a shallow pot and arrange the prepared vegetables around it.
- Place the duck-stuffed squash in the middle, cut it into 6-8 pieces and fan them out, and steam over medium heat for 15 minutes to finish.
💡 Tip- Making your own sauce instead of using a store-bought one reduces sugar and salt. - Blanching the smoked duck once in boiling water can reduce sodium intake.
