Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Cut the kabocha squash into eighths, scoop out the seeds, and steam thoroughly in a steamer for about 15-20 minutes.
  2. Cut the beef into thin strips, season with garlic, soy sauce, and sugar, stir-fry in a pan, and cool.
  3. Cut the bell pepper, cucumber, and red cabbage into thin strips, soak the radish sprouts briefly in water, cut the apple into thin strips and soak briefly in sugar water, and cut the root ends off the enoki mushrooms and prepare them in handful-sized bunches.
  4. Mix the minced garlic, minced onion, olive oil, sugar, vinegar, and salt evenly to make the sauce.
  5. Peel the steamed kabocha, push it through a sieve, and mix with flour, water, and a little salt to make the kabocha batter.
  6. Oil a pan, ladle in the kabocha batter one scoop at a time to make crepes, and when the crepes are cooked, let them cool a little. Put the stir-fried beef and vegetables inside, roll them up, and serve with the sauce.
💡 TipRolls made with kabocha crepes filled with apple, mushrooms, and various vegetables taste good with little sodium.
