Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Shred the crab meat finely, and cut the watermelon, eggplant, red cabbage, and broccoli into 5 cm-long strips.
  2. Blanch the prepared broccoli in boiling water (5 cups) for 1 minute, soak in cold water, and drain in a sieve.
  3. Heat a pan over medium heat, add olive oil (5 ml), and stir-fry the eggplant for 2 minutes.
  4. Blend the soy milk sauce ingredients in a blender to make the soy milk sauce.
  5. Stack in a bowl in this order: watermelon, eggplant, broccoli, red cabbage, crab meat.
  6. Pour the soy milk sauce over the top to finish.
💡 TipWatermelon, crab meat, broccoli, and eggplant add texture. A nutty soy milk sauce reduces the sodium used.
