Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Boil the garlic and green onion in a pot, then add the chicken drumsticks and boil them.
  2. Strain the broth the chicken was boiled in, skim off the fat, and chill it.
  3. Shred the boiled chicken along the grain.
  4. Julienne the onion, cucumber, and bell pepper.
  5. Julienne the red cabbage, soak in cold water, then drain.
  6. Season the strained, chilled chicken broth with fermented mustard, salt, sugar, and vinegar; put the chicken, cucumber, red cabbage, bell pepper, and onion in a bowl and pour in the cold broth to finish.
💡 TipMixing mustard into the chicken broth removes the chicken's gamey smell, and its spicy flavor and aroma reduce the need for salt.
