Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Season the chicken breast with salt and black pepper, wrap it in plastic wrap, and cook slowly in water at about 50°C (122°F).
  2. Make yellow and white egg garnishes (jidan) and cut into strips; julienne the shiitake mushroom, carrot, cucumber, bell pepper, and sweet potato and stir-fry them in a pan.
  3. Blanch the water dropwort in boiling salted water, then rinse in cold water.
  4. Blanch the chwinamul in boiling salted water, rinse in cold water, and spread it out flat.
  5. Tear the scorched rice by hand into pieces and deep-fry in oil.
  6. Roll the cooked chicken breast and stir-fried vegetables in the chwinamul, tie with the water dropwort, cut into bite-size pieces, arrange on a plate, and top with the fried scorched rice.
💡 TipThe aroma of chwinamul adds flavor even with light seasoning, which helps reduce sodium.
