Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Soak the black soybeans in cold water for 1 hour, then boil until cooked and remove any impurities. Blend the black sesame seeds, drinking water, boiled beans and walnut in a blender, and put in the freezer until a thin layer of ice forms.
  2. Peel the cucumber in a spiral and julienne it, cut the tomato into 1/8 wedges, and boil the egg and halve it.
  3. Blanch the konjac noodles in boiling water, rinse in cold water, and put in a bowl. Pour in the soybean broth and top with the cucumber, tomato and egg as garnish to finish.
💡 TipBlack soybeans are rich in anthocyanin pigments, which are good for restoring eyesight and have anticancer effects. Konjac noodles replace sodium-rich thin wheat noodles, reducing sodium and calorie intake, and black sesame and walnuts in the bean broth emphasize a nutty flavor and aroma instead of saltiness.
