Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Clean and cut the abalone, then blend the abalone innards with soju in a blender.
  2. Mix the sesame oil and garlic oil and stir-fry the soaked rice in it.
  3. Cut the lotus root, carrot, and kabocha squash into small cubes and stir-fry each separately.
  4. Cut the abalone into small cubes and lightly stir-fry with the cocktail shrimp, clams, minced garlic, and rice wine (cheongju).
  5. In a pot, stir-fry the blended abalone innards in the prepared oil, add the rice and stir-fry, then add the remaining vegetables and stir-fry.
  6. Finally, add the shrimp and clams, stir-fry, and finish.
💡 TipBlending the abalone innards with soju removed the fishy smell, and lotus root and kabocha squash, which help flush out sodium, together with the abalone's nuttiness and the chewy vegetables, reduced the sodium.
