Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Put the broth ingredients in a pot and boil.
- Soak the soybeans thoroughly, then blend them with water in a blender.
- Tear the oyster mushrooms, cut the shiitake mushrooms into bite-size pieces, cube the zucchini and onion, and thinly slice the green onion and chili peppers.
- Soak the clams to remove grit.
- Add the soybeans, oyster mushrooms, shiitake mushrooms, zucchini, low-sodium doenjang, shrimp and clams to the broth and boil.
- Add the soft tofu and boil, then add the onion, green onion, red chili pepper and green chili pepper and bring to a quick boil to finish.
💡 TipUnlike ordinary spicy soft tofu stew, white soybeans and cheongyang chili pepper provide the flavor, lowering sodium, while shrimp and clams give savory depth.
