Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Cut the onion into thick strips, slice the button mushrooms in their shape, slice the garlic flat, and cut the tomatoes into 6-8 pieces.
  2. Boil the tagliatelle in the vegetable broth (6 cups) for 13 minutes and drain.
  3. Heat a pan over medium heat with olive oil, cook the flat-sliced garlic until golden, then add the onion and button mushrooms and stir-fry for 3 minutes.
  4. Add the pasta cooking water (1 cup), turmeric powder, and fine gochugaru and mix evenly; add the tomatoes and stir-fry, then add the plant-based cream and soy milk, and when it boils, add the dried tomatoes and boil for 1 minute.
  5. Add the boiled tagliatelle and toss until the sauce soaks into the noodles, then sprinkle with ground black pepper.
  6. Put in a bowl, sprinkle with minced parsley and pink peppercorns, and finish with basil leaves and baguette on the side.
💡 Tip- Tomatoes and button mushrooms, high in potassium, help flush out sodium.
