Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Mix the low-sodium soy sauce, vinegar, and water (10 ml), add thinly sliced red onion, and pickle for 30 minutes to make onion pickle (yangpa jangajji).
- Blend the tofu, fresh shrimp, enoki mushrooms, carrot, perilla leaves, and bell pepper in a blender until smooth.
- Lightly stir-fry the ground beef in a pan over medium heat, then mix it with the blended ingredients, potato starch (45 g), and egg whites to make the filling.
- Trim both ends of the zucchini, hollow out the inside, and coat the inside evenly with potato starch (5 g).
- Fill the zucchini with the filling and steam in a steamer for 8 minutes.
- Cut the zucchini sundae into 1 cm slices, place on a plate, and top with the onion pickle.
💡 TipServed with onion pickle, this zucchini sundae tastes good without any additional seasoning.
