Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Wash the clam meat and shrimp by shaking them in salt water, then drain in a sieve.
  2. Slice the scallion and green and red chili peppers, and mince the garlic and ginger.
  3. Boil the kalguksu noodles in boiling water, rinse in cold water, and toss with sesame oil.
  4. Add the measured ingredients to anchovy broth to make the soy sauce.
  5. Heat oil in a pan, stir-fry the minced garlic, ginger, and chili peppers, then over high heat add the clam meat, shrimp, and rice wine and stir-fry, then add the soy sauce mixture and boil.
  6. When step 5 has reduced by about half, add the kalguksu noodles and stir-fry, adjust the thickness with the starch slurry, and finish with the sliced scallion and sesame oil.
💡 TipSoaking the clams in salt water beforehand makes them spit out the sand and gives a better texture.
