Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Soak the chicken in cold water to remove the blood, blanch in boiling water, and drain the fat.
  2. Soak the glass noodles and dried shiitake mushrooms separately in water, and set aside the mushroom soaking water.
  3. Cut the shiitake mushrooms, potato, onion, and carrot into bite-size pieces, and slice the fresh ginseng and green onion on the diagonal.
  4. Put the chicken, seasonings, mushrooms, potato, onion, carrot, dried chili peppers, and 3/4 cup of the mushroom soaking water in a pot and simmer.
  5. When the chicken is about half cooked, add the fresh ginseng and continue simmering.
  6. When the chicken is fully cooked, add the glass noodles, green onion, and minced garlic, boil briefly, and serve.
💡 TipAdding ginger slices when blanching the chicken removes the gamey smell. - Dark soy sauce (nodu-yu) is a type of soy sauce used in place of caramel sauce; adding it to braised or grilled dishes gives a deeper color and better aroma.
