Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Make a teriyaki sauce from the seasoned soy sauce using the sauce ingredients.
- Clean the fish, remove the moisture, and season it lightly with white pepper.
- Cut the ginger into very fine strips and rinse in cold water.
- Cut the green onion into very thin strips and soak in cold water to remove its sharpness.
- Grill the Spanish mackerel over low heat in a pan with butter.
- Simmer the grilled fish in the sauce and top with the green onion strips. Drizzle the sauce over the mackerel and top with the ginger strips to finish.
💡 TipCoffee masks the fishy smell of the Spanish mackerel, and the seasoned soy sauce, made with a vegetable ferment, keeps the saltiness low while preserving depth of flavor.
