Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Mash the tofu with the back of a knife, wrap it in cheesecloth, and squeeze out the moisture.
  2. Finely mince the shrimp, garlic chives, and shiitake mushrooms.
  3. Add the minced shrimp, garlic chives, shiitake mushrooms, salt, and black pepper to the tofu to make the filling.
  4. Put 10 g of filling on each dumpling wrapper, let the shrimp tail stick out, and pinch closed.
  5. Line a steamer with damp cheesecloth, add the dumplings, and steam for 7 minutes.
  6. Serve with the dipping sauce.
💡 TipChopping the shrimp with a knife keeps a chewy bite and gives a good texture. - Leftover napa cabbage kimchi, minced, also tastes good in the filling.
