Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Put the shiitake stems, anchovies (heads and innards removed), dried kelp and onion in cold water and boil over medium heat for about 10 minutes to make the anchovy broth.
  2. Strain out the shiitake stems, anchovies, dried kelp and onion from the broth, then slice the shiitake mushrooms and cut the bok choy into 4cm pieces.
  3. Add the prepared shiitake mushrooms and bok choy to the boiling broth, season with the soup soy sauce, add the garlic, and bring to a quick boil.
💡 TipPutting the shiitake stems in the broth adds savory flavor, and the anchovies and dried kelp deepen the taste of the broth without a lot of salt. Dried shiitake are rich in vitamin D formed while drying in the sun, which helps calcium absorption and is good for preventing osteoporosis. Fresh shiitake contain almost no vitamin D.
