Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Finely chop the king oyster mushroom, chicken breast, onion, garlic and garlic chives, and finely chop the tofu too and remove the moisture. Mix everything with the soy sauce, shape into balls, and roll them in a mixture of starch and flour.
  2. Dip them in cold water and take them out, then roll in the powder again, repeating 2 to 3 times until a dumpling-wrapper-like coating forms on the outside, then lightly blanch in boiling water.
  3. Slice the chili peppers on the diagonal, and cut the enoki mushrooms, zucchini and tofu into bite-size pieces.
  4. Put the broth ingredients except the low-sodium doenjang in a pot with water, and when it boils, dissolve the low-sodium doenjang through a sieve and strain through a cotton cloth.
  5. Add the rolled dumplings, zucchini and enoki mushrooms to the broth and boil.
  6. When the dumplings are cooked enough, add the tofu, boil, and finish with the chili peppers as garnish.
💡 TipLow-sodium doenjang and low-sodium soy sauce are used instead of traditional doenjang and soy sauce, which reduced sodium intake.
