Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Mix the dough ingredients to make the ravioli dough and rest it in the refrigerator.
  2. Bring milk to a boil, add lemon juice, and when curds form, strain through cheesecloth to coagulate.
  3. When the milk has cooled, mix in chives and Parmesan cheese to make ricotta cheese.
  4. Roll the rested ravioli dough to 1mm thickness, cut into 4x4cm squares, fill with ricotta cheese, and boil in boiling water.
  5. Slice the onion, carrot, and tomato, finely chop the celery and garlic, and boil them in a pot with basil, oregano, rosemary, water, and sugar to make tomato sauce.
  6. Serve the ravioli with the tomato sauce.
💡 TipProcessed tomato products are high in sodium, so making the sauce from fresh tomatoes works well as a low-sodium sauce.
