Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Put the radish, pork and dried kelp in a pot and boil. When it boils, remove the kelp, add the rice wine and small dried shrimp, boil over low heat until the meat is cooked, and strain.
  2. Trim the ends of the mung bean sprouts, tear the oyster mushrooms along the grain, julienne the onion, slice the green onion and cheongyang chili pepper on the diagonal, and cut the radish flat.
  3. Cut the base off the young napa cabbage, cut it at 3cm intervals, blanch it, rinse in cold water, and squeeze out the moisture.
  4. Make the seasoning sauce, then add the shredded meat and young napa cabbage and toss.
  5. Add the radish, the seasoned meat and young napa cabbage, mung bean sprouts, oyster mushrooms, green onion and cheongyang chili pepper to the broth in that order, and boil thoroughly to finish.
💡 TipYoung napa cabbage contains plenty of potassium, which helps excrete sodium. The soup is seasoned with doenjang and ground perilla seeds to soften the harshness of yukgaejang with a nutty, mild taste.
