About this dish

Pepper steak is a stir-fried Chinese dish consisting of sliced beef steak (often flank, sirloin, or round) cooked with sliced bell peppers and seasonings such as soy sauce and ginger, and usually thickened with cornstarch. Sliced onions, bamboo shoots, and bean sprouts are also frequent additions to the recipe. Evidence for the dish's existence in the United States dates from at least 1948. The dish originated from Fujian cuisine, where it was known as qīngjiāo ròusī (青椒肉丝, green pepper shredded pork). (A somewhat similar dish, 农家小炒肉 or nóngjiā xiǎo chǎoròu "country-style small stir-fried pork", also exists in Hunan cuisine.) In the original Fujian dish, the meat used was pork and the seasonings were relatively light compared to pepper steak.

Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Cut the peppers in half and remove the insides.
  2. Cut the prepared peppers into 3cm-long strips.
  3. Julienne the bamboo shoots, shiitake mushrooms, scallion, and ginger.
  4. Slice the pork thinly, then cut it into fine 0.3x5cm strips and season lightly.
  5. Coat the seasoned pork in egg white and starch.
  6. Add cooking oil to a pan and stir-fry the ginger to release the aroma, add the vegetables and pork and stir-fry, season, then drizzle with sesame oil and cook.
💡 TipDo not pre-season the pork or vegetables; season at the end. It is nice served with flower buns (kkotppang).
