Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Cut the napa cabbage, onion, and tofu into bite-size pieces, and slice the scallion and Cheongyang chili pepper diagonally.
  2. Steep the leftover onion skins, scallion roots from the prep, and the dried anchovies to make a broth, then strain.
  3. Put the tofu in boiling water for about 10 minutes to draw out the salt.
  4. Stir-fry the napa cabbage with sesame oil in a pot, then add the rice-rinse water and broth and boil.
  5. Add the tofu, onion, scallion, and chili pepper.
  6. Add the doenjang, grated garlic, and ginger juice to adjust the seasoning.
💡 TipBlanching the tofu beforehand reduces the salt.
