Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Wash the chicken clean, and cut the onion and daepa into quarters.
  2. Slice the king oyster mushrooms thick in their shape, cut off the base of the enoki mushrooms and separate them, and cut the minari into bite-size pieces.
  3. Put the chicken in a pot with water to cover, add the onion, daepa, half of the minari, and garlic, bring to a boil over high heat, and boil until the chicken is cooked.
  4. Remove the chicken, onion, and minari and let cool slightly, then pull the meat off the chicken.
  5. Mix the chicken meat, onion, remaining minari, egg, and starch evenly to make chicken balls.
  6. Add the chicken balls, king oyster mushrooms, enoki mushrooms, button mushrooms, and remaining minari to the broth, season with the seasonings, and bring to a quick boil to finish.
💡 Tip- A broth with onion, daepa, and minari gives a gentle, non-aggressive taste.
