Translated from the Korean original. Amounts are as in the original recipe.
- Peel the lotus root, slice it 0.5 cm thick, and briefly blanch it in boiling water with salt and vinegar.
- Peel the sweet potato, boil it, and mash it.
- Finely chop the nuts, mix them into the boiled sweet potato, and shape into small round patties like dongnggeurangttaeng.
- Mix the tempura mix, egg, and salt to make a batter. (Use the prickly pear powder to make batter in two colors.)
- Put the mashed sweet potato between slices of lotus root.
- Assemble the lotus root sandwiches and fry in 170°C oil.
💡 TipThe sweet potato and nuts inside the sandwich give a sweet and nutty flavor.
