Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Put water in a pot, dissolve the doenjang, add the green onion and ginger, and boil.
  2. When the water boils, add the pork ribs and boil for 5 minutes.
  3. Cut the white kimchi into 5 cm lengths.
  4. Put the red wine in a pot over heat to cook off the alcohol, then add the kimchi, cooking wine, and honey and simmer until the flavor soaks in.
  5. Sprinkle the boiled back ribs with salt, brush with olive oil, and grill in a pan.
  6. Serve the grilled ribs with the wine-braised white kimchi.
💡 TipUsing sour white kimchi and leftover wine reduces food waste. It is also delicious to put the grilled ribs in the sauce left from braising the kimchi and simmer briefly so the sauce flavor soaks into the meat.
