Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Cut the tails off the gwamegi.
  2. Extract juice from the minced ginger and garlic and sprinkle it over the cleaned gwamegi.
  3. Mix gochujang, minced garlic, minced green onion, plum syrup, gochugaru, black pepper, and water to make a seasoning sauce.
  4. Julienne the pickled plum.
  5. Place the gwamegi in a pan and lightly grill while brushing with the gochujang seasoning.
  6. Top the grilled gwamegi with the pickled plum to finish.
💡 TipGwamegi has a lot of oil, so cook it without adding oil to the pan. Since gwamegi is also eaten raw, just grill it lightly in the pan enough to coat it with the seasoning sauce.
