Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Put room-temperature green tea and dried kelp in a bowl to make green tea water. Wash and prepare the soybean sprouts and wild chives. Cut the cod into bite-size pieces and remove the moisture with paper towels.
  2. Blanch the prepared soybean sprouts in boiling water for 2 minutes and remove the moisture. In a pan, stir-fry the blanched sprouts, brown rice, and the bean sprout rice seasoning. Turn off the heat, add bonito flakes (5 g) and the finely chopped wild chives, and mix to make bean sprout rice.
  3. Mix all the cod seasoning in a bowl, add the prepared cod, and cook in the microwave for 3 minutes (at 700 W).
  4. In a bowl, finely grind the sesame seeds, bonito flakes (5 g), onion powder, and gochugaru and sprinkle over the cooked cod.
  5. Put the bean sprout rice in a bowl, top with the cooked cod, and make an egg garnish (jidan) to place on top.
  6. Warm the green tea water with the kelp removed and pour it over the bean sprout rice to finish.
💡 Tip1. The savory flavor of dried kelp and bonito flakes makes up for the mild taste. 2. Aromatic ingredients such as wild chives and perilla oil boost the flavor and reduce the sodium used. 3. Yuja syrup and onion powder reduce the sugars used.
