Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Pit the jujubes by cutting around the seed and mince them finely.
  2. Add the jujubes, salt, and black pepper to the minced beef and pork and knead.
  3. Coarsely chop the zucchini, kabocha squash, and bell pepper, add them to the ?, and knead well.
  4. Slice the button mushrooms and cook them in a pan; remove the head of the ginseng, wash it well, stir-fry it in a pan, chop it finely, and add it to the ?.
  5. Shape the evenly mixed tteok-galbi mixture into rib shapes.
  6. Grill the tteok-galbi in a pan; lay napa cabbage leaves on a plate, top with the cooked button mushrooms, and place the tteok-galbi on top.
💡 TipThe sweetness of the jujubes means you can use less soy sauce, which reduces sodium.
