Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Cut the carrot into fine strips.
  2. Separate the egg into yolk and white, make thin omelet sheets of each, and cut them into strips about 5 cm long.
  3. Blanch the spinach in boiling water with salt until bright green, squeeze out the moisture, and season it.
  4. Marinate the pork with garlic, green onion, sugar, mirin, soy sauce, pepper, toasted sesame seeds, and sesame oil for 30 minutes, then stir-fry it in a pan.
  5. Boil and mash the sweet potato, squeeze the water out of the tofu with cheesecloth, and chop the tomato, onion, and nuts into small pieces and mix.
  6. Dip the rice paper in warm water and take it out right away. First spread the mashed sweet potato (5), then top with the prepared ingredients (2, 3, 4), roll it up, and cut into bite-sized pieces to finish.
💡 TipSweet potato and tofu are used instead of rice, which raises the protein, and chopped nuts reduce the sodium.
