↔ No kimchi? Store-bought kimchi works well. For cooking, older and more sour kimchi tastes better. Sauerkraut with a little gochugaru is a last resort.

  • doenjang (soybean paste)된장(1½ tbsp)
↔ No doenjang (soybean paste)? Use red or brown miso. Miso is sweeter and milder, so add a little more and a pinch of salt.

Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Blend the tofu with the rice-rinsing water.
  2. Slice the pork, and wash the kimchi in water to remove the seasoning and cut it into 3×3cm pieces.
  3. Stir-fry the pork and kimchi together in a pot, then add the doenjang strained through a mesh, the blended tofu from step 1, gochugaru, cheongyang chili pepper and red chili pepper and boil. Finish by adding the green onion.
💡 TipRinsing the kimchi in water removes salt, and chili peppers add spicy heat and aroma. Tofu is rich in soy protein, which is good for brain development.
