Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Soak in water mixed with vinegar to remove the bitterness.
  2. Pat the brined deodeok completely dry with paper towels.
  3. Cut the onion, green chili pepper, and red chili pepper on the diagonal.
  4. Slice the beet and make the broth.
  5. Put the deodeok in a bowl first and let it soak for about 30 minutes so it absorbs a little of the liquid.
  6. Add the remaining ingredients too and let the flavor soak in, and it can be eaten after 24 hours.
💡 TipDeodeok is normally soaked in salted water to remove its bitterness, but soaking it in vinegar instead keeps salt from soaking into the deodeok, and ginger syrup gives a spicy-sweet taste that adds depth to the broth.
