  • gochugaru (Korean chili flakes)고춧가루(4g)
↔ No gochugaru (Korean chili flakes)? Mix 2 parts sweet paprika with 1 part cayenne or red pepper flakes. Less smoky and a bit hotter, so start with half.

Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Slice the canned ham and blanch it in boiling water.
  2. Slice the zucchini into half-moons, cut the tofu thick, cut the enoki mushrooms into thirds, and slice the cheongyang chili pepper on the diagonal.
  3. Wash the kimchi and chop it finely.
  4. Make the seasoning sauce.
  5. Put water and dried kelp in a pot and boil lightly to make the broth.
  6. Put the prepared ingredients in the broth, add half of the seasoning sauce, and boil over medium heat, then add the crown daisy and the remaining seasoning sauce and boil a little longer over low heat to finish.
💡 Tip•The kimchi is washed and the ham is blanched once, lowering the sodium content.
