Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Cut the butterbur stalks, blanch them, and peel.
- Soak the blanched butterbur stalks in cold water for 1 to 2 hours to remove the bitterness.
- Add the seasonings and toss the butterbur stalks.
- Heat perilla oil in a pan and stir-fry the seasoned butterbur stalks.
- Add half a cup of water and simmer thoroughly until a little liquid remains.
- Let the finished butterbur namul cool and keep it chilled in the refrigerator before eating.
💡 TipSoak the butterbur stalks in water thoroughly to reduce the bitterness. - Lightly steam butterbur leaves, spread them with ganggdoenjang (thick doenjang stew; see Garlic Chive Ganggdoenjang Bibimbap), and wrap rice in them; the slightly bitter taste stimulates the appetite.
Diet and allergy labels are estimated from the ingredient list. Check labels if you have an allergy.
