Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Soak the pork ribs in cold water for at least 2 hours to remove the blood, then boil them for about 1 hour with the bay leaves, ginger, and whole peppercorns and drain.
  2. Cut the red cabbage, carrot, and onion into thin strips and soak in cold water.
  3. Chop the chestnuts into the citron syrup, add apple juice, heavy cream, sugar, salt, and vinegar, and mix evenly to make the sauce.
  4. Drain the soaked vegetables in a strainer to remove the moisture.
  5. Heat oil in a pan and stir-fry the minced garlic to make garlic oil.
  6. Grill the boiled ribs in the garlic oil until golden brown, put them on a plate with the drained vegetables, and top with the citron sauce to finish.
💡 TipThe citron sauce removes the gamey smell of the meat and makes it tender. The sweet-and-sour sauce lets you make tasty ribs with little sodium.
