Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Put the chicken broth ingredients in a pot and boil for 20 minutes, then strain through a cotton cloth.
  2. Rinse the prawns well under running water, remove the heads and shells, and marinate in white wine.
  3. Clean the spinach and lightly blanch it in boiling water.
  4. Boil the chicken broth (100g), yuja marmalade and plum syrup in a pan, and when well combined, add the prawns and simmer.
  5. When the prawns are nearly cooked, add the spinach and simmer for 1 more minute.
  6. Put the spinach in a bowl, place the prawns on top, and finish by topping with the avocado and tomato cut into bite-size pieces.
💡 TipThe cleaned prawns are soaked in water to draw out the sodium, lowering the sodium content.
