Translated from the Korean original. Amounts are as in the original recipe.

  1. Cut the bok choy in half and score the stem portion.
  2. Sprinkle the bok choy with salt and cure for 30 to 40 minutes.
  3. Peel the pear and grate it to make juice.
  4. Boil water (30 g) and the glutinous rice flour in a pot to make a glutinous rice paste, and cool it completely.
  5. In a bowl, mix the cooled rice paste, pear juice, and seasoning paste ingredients evenly to make the seasoning.
  6. Drain the salted bok choy and toss it with the seasoning to finish.
💡 TipLow-sodium soy sauce, pear juice, plum syrup, and aromatics make a geotjeori seasoning with reduced sodium.
