Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Mix all the dough ingredients and let rise for 30 minutes, punch, then let rise for another 40 minutes. * Punching means releasing the gas.
  2. Divide into 150 g pieces and let rest for 20 minutes (intermediate proof).
  3. Divide the chewy dough into 80 g pieces and roll each out thin. Pipe on the filling of cream cheese mixed with basil pesto, arrange the boiled diced sweet potato closely on top, and roll it up.
  4. Gently stretch the rested baguette dough, keeping as many air pockets as possible. Place the chewy dough on top and lightly roll it into a log shape.
  5. Spray the dough with water, dust with flour, and let it rise for 1 hour (second rise).
  6. Score three diagonal slashes so the bread does not burst, and bake in a convection oven at 195°C for 16 minutes with 8 seconds of steam.
💡 TipWe used no added sugar and brought out the natural sweetness of the sweet potato.
